Why Hollis Mead?

Because we care. Simple as that. About our cows. Our pasture. Our workforce. The creatures in our hedgerows. And most of all, the incomparable quality of our milk.

As little as 24 hours after milk comes from the cow it starts to deteriorate and loose its freshness. As result, everything we produce from our cream to our cheese is made on the farm using milk from that day. Compared with industrial processors where milk can be stored on the farm for up to two days, then transported, processed and finally distributed, we have the great advantage of proximity and therefore freshness.
We specifically have Ayrshire (brown and white) and British Friesian (black and white) cows. These are smaller breeds (British Friesians being much smaller than their Holstein cousin) and favoured for their ability to suit once a day milking. Approximately, a third of our heard is the native Ayrshire cow, which we use for their great tasting milk.
We have a small, highly dedicated team who take immense care in all aspects of production. Butter is rolled by hand at 4 o’clock in the morning to ensure the perfect temperature to be handled. Our cheeses are made in small batches, and hand turned daily. Our kefir is is made in vats and bottled by local people rather than machines. We love what we do, and are only interested in producing the absolute very best in taste and quality.
